arugula, pesto & goat cheese pizza.



If you want to play "Sandra Lee" by appearing fancy without all the hard work then give this pizza recipe a whirl! This is one of our go-to faves and all the ingredients can be purchased with a single trip to your local Trader Joe's. This pizza serves about 2 but can be stretched to 3 or 4 if you are serving this as an appetizer.

Total prep time: 5 minutes
Total cook time: 35 minutes

Ingredients:

  • Garlic & herb pizza dough
  • Pesto (for the sauce)
  • ~5 to 7 oz goat cheese
  • Two roma tomatoes
  • Red onion (as desired)
  • Arugula (as desired)
  • Balsamic vinegar

Directions:
  • Preheat the oven to 350 degrees
  • Lay out the pizza dough into a circle onto a greased baking sheet
  • Bake just the dough for approximately 5 minutes 
  • Remove the pizza dough from the oven and add the ingredients
    • Add pesto, a thin layer of goat cheese, tomatoes (cut into quarters), chopped onions, and another heavy layer of goat cheese (if you are as obsessed with goat cheese as we are)
  • Place the pizza back into the oven and cook for 25-30 minutes until the edges of the crust are brown and the cheese appears a bit toasty, as goat cheese doesn't melt like traditional mozzarella. 
  • Slice the pizza as desired and top your slices with a little arugula and drizzle with some balsamic vinegar.
